I've chosen Deliciously Dairy Free as the Breakfast Club theme this month because being forced into avoiding so many kitchen staples has improved my cooking skills hugely. It's made me discover ingredients that I never knew existed - some of which I love (like oat milk and almond milk) others which I hate with a passion (like soya cheese!). But more importantly it's made me start to really understand cooking; in order to successfully substitute ingredients you need to think about what job they're doing in a recipe - are they there to bind, to flavour, to bulk out etc etc. And it's that experimentation and thinking outside the box that I'm encouraging you all to dabble in.

I thought it might be fun to tip our culinary hats in the direction of Ireland and help them celebrate St Patrick's Day by creating something green. Yes, you read right. I said green ;0)

The 'green' is pretty much open to interpretation ... maybe green food colouring or a green food stuff (good luck combining chocolate and broad beans into a mouth watering offering!) but I'm afraid that anything offered up as environmentally friendly and therefore green will not be cutting the mustard. I have been thinking of starting this for over a year. I originally got the idea from one of those chef/cooking contest shows. The chefs had to shop at one of those huge dollar stores in the states that carry frozen food and fresh fruit. I have never been in one of those huge dollar stores but ever since that episode when I am in a dollar store I walk down the food aisles and try to think of what I would make. So that's the challenge! Shop at a dollar store and see what delicious dishes you can dream up!

MLLA is really about legumes of any sort as the main draw. In short, I accept an entry as long as the recipe showcases the legume primarily but not as an auxiliary ingredient.

Ben & Jerry’s embarks on its European search to uncover the brightest young minds that can create a business embracing the ice cream pioneer’s philosophy of giving back to the community. Successful entrants will have to pitch their business idea to a panel of industry leaders - including Ben & Jerry’s co-founder Jerry Greenfield, as well as representatives from Ashoka, VSO and the Fairtrade Foundation.

The first 100 entrants, who submit early application (before 15 March), will scoop the equivalent of a year’s supply of Ben & Jerry’s ice cream. Entrants will have until the 15th April to put themselves forward, with 25 entrepreneurial semi-finalists being invited to present their ideas to the judging panel in London in May.

The 15 finalists chosen by the panel will be taken to Africa this summer for the last stage of the program with development gurus VSO, where they will share social business ideas, live with vanilla farmers and help local development projects in their community.

Five overall winners will scoop themselves a €10,000 cash prize and they will be featured on a Ben & Jerry’s tub.

There will also be a ‘People’s Choice Award’, where the Join Our Core community will pick five winners who will each receive €1,000 in cash.
